A Coleslaw Dressing Makeover!

I grew up in the south with southern women who were masters of the kitchen. Everything my grandmother and mother made tasted good…we ate lots of veggies and they were always dripping in good healthy fats. I vividly remember my grandmother making coleslaw dressing and it was amazing…I have always wanted to make it. The title of that recipe is “McDonalds Coleslaw Dressing.” Not really synonymous with healthy. It contained lots of canola oil laden mayonnaise and white sugar so I had pretty much given up on every enjoying those flavors again. Yesterday I was going to serve broccoli slaw with dinner and I set out determined to re-create that slaw dressing with healthy ingredients. So I mixed a lot. Tweaked a lot. Added things here and there and this is what I came up with. If it tastes a little too bitter to you go ahead and add more honey, honey. 🙂

Eliza’s Healthy Coleslaw Dressing
(perfect for anything that you can shred and call slaw)

Combine these ingredients in a large mason jar:

  • 3/4 c organic apple cider vinegar with the mother
  • 1/4 c organic mustard
  • 1/4 cup avocado oil
  • 1/4 cup local honey
  • 1 tsp sea salt
  • 1 avocado

Take a hand immersion blender and blend right in the mason jar and then drizzle over your slaw in a container, then place lid on the container and shake to evenly distribute the dressing. If you don’t have a hand immersion blend you could certainly use a regular blender. We love this over broccoli slaw, it’s the perfect combo of sweet and tangy and replaces all the unhealthy ingredients with nutrient dense options that nourish your body!
